Citrus Zester

A zester is a tool used to remove the zest from citrus fruits, such as lemons, oranges or grapefruit. The zest is the outer colored part of the citrus peel, which contains essential oils and offers an intense flavor.

The zester usually consists of a handle and a perforated metal head with small, sharp blades. By passing it over the skin of the citrus fruit, it allows you to remove thin strips of zest without removing the white part (or albedo) which is more bitter.
